Ingredients

  • Goat bones (trotters)
  • 2 tbsp lemon juice
  • 2 tbsp garlic paste
  • 2 tbsp ginger paste
  • Ground chillies (optional)
  • 2 tbsp of oil
  • 1 large diced onion
  • 1 tsp cumin seeds
  • 400g can of tomatoes
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1/2 tsp turmeric
  • salt to taste
  • 1/2 tsp of garam masala
  • Sliced thick bread

  • Prepare the marinade ahead of time
  • Clean trotters thoroughly before starting

Instructions

    1. Clean and marinate goat bones (trotters) in lemon juice, garlic paste, ginger paste. Optional: ground chillies. Marinate for 60 min.

    2. Pressure cook for 1 hour with 2 cups of water.

    3. Heat oil in a pot and fry onions until brown.

    4. Add cumin seeds and heat for 30 secs.

    5. Add tomatoes, stir and cook on low-med heat for 10 minutes.

    6. Mix in pressure cooked bones, and the glutenous liquid from pressure cooking.

    7. Add cumin, coriander, turmeric, and salt to taste and simmer for 5 minutes.

    8. Add garam masala and stir and simmer for 30 minutes.

Noor's Tips for Junior Chefs!

Make sure to find a butcher that knows how to clean trotters ahead of time - many middle eastern shops have them.
Interesting fact: This is a speciality at the end of Ramadan. It rose from the Mughal courts when many cultures were mixing.
Don't forget to get the juicy marrow from the bones! It's so much fun to dig out!!
