Ingredients

  • 2 lbs Chicken
  • 1 tbsp kibbeh (ghee)
  • 1 chopped onion
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • ½ cup berbere spice mix
  • 1 cup water
  • Salt and lemon juice
  • Hard boiled eggs (optional)

Prep Hacks

  • Prepare all spices ahead of time
  • Can be made simultaneously with Shiro Wat

Instructions

    1. Sprinkle salt and lemon juice on chicken and set aside to marinate.

    2. Heat ghee and saute onions until translucent.

    3. Mix in garlic, ginger, berbere spice, ¼ cup of water. saute for 10 min.

    4. Add chicken and remaining water and simmer for 45 min until chicken is cooked.

Serve it all on a layer of injera – yummy Ethiopian flatbread!
Add in some cabbage, beets or collard greens! They are all traditional accompaniments.
You can include cottage cheese as a replacement for traditional Ethiopian cheese
